Kachori



Kachori is a very famous Indian dish. This mouth watering menu never require any introduction. There are various form of kachori available like moong dal kachori / aaloo kachori / mutter kachori / pyaj kachori/ mini kachori etc. Here I am share the recipe of moong dal kachori...


Ingredients:- 


For Dough--- 

All Purpose Flour - 2 cup 

Wheat Flour - 1/2 cup

Gram Flour - 1/2 cup

Salt - as needed

Oil - 1/2 cup 



For Stuffing---

Moong Daal (Yellow) - 1 cup

Gram Flour - 2 tsp

Oil - 3 tsp

Mustard Seeds - 1/4 tsp

Cumin Seeds - 1/2 tsp

Fennel Seeds - 11/2 tsp

Asofetida (hing) - as per taste

Red Chilli Powder - 1/2 tsp

Turmeric Powder - 1/2 tsp

Coriander Powder - 3/4 tsp

Cumin Powder - 1/2 tsp ( optional )

Salt - as per taste

Dry Mango Powder - 1 tsp


Procedure:-


For Dough ---

• Take a large bowl.

• Take all the flours like all purpose flour, wheat flour & gram flour in it.

• Add salt & mix all the ingredients.

• Make a hole in the center of this mixture  & add oil in it.

• Now mix it again very well.

• Now add some water  & start to knead the dough. Make a smooth & soft dough.

• Grease the dough with oil & cover it.

• Now keep it aside for  20 mins.


For Stuffing---

• Firstly, in a bowl soak moong dal for 2-3 hours.

• Drain off the water & then transfer it to the blender jar.

• Now blend it & make a course paste.

• Now in a pan, heat oil. 

• Now add mustard seeds , cumin seeds, hing & fennel seeds.

• Saute untill the spices turn aromatic.

• Further add turmeric powder, coriander powder, red chilli powder, cumin powder, dry mango powder & salt.

• Saute again for 1-2 mins on low flame.

•Now add gram flour & roast it untill turns aromatic.

• Now add coursely ground moong dal.

• Mix it well & cook until the moong dal is well combined. 

• Now stuffing is ready. Keep it aside to cool completely.

Dough & stuffing both are ready , so let's start the procedure for "KACHORI"...

•Take oil in a pan for frying & let it hot.

•Once oil gets hot , keep the flame low.

•Meanwhile take the dough & knead it once again just to make it smooth.

• Pinch a small sized dough & tuck well.

• Grease with oil & roll it gently.

• Place a small ball sized prepared moong dal stuffing.

• Start to pleat & seal tightly.

•Pinch off the excess dough & then again roll it gently. Make sure the thickness should be uniform.

• Drop it in the oil & leave until the kachori start to float by itself.

• Carefully flip over & fry the other side.

• Fry until the kachori turns golden brown & crispy.

• Now drain off the kachori on kitchen paper to remove excess oil.

• Finally the delicious kachori is ready.

•Serve it with tomato sauce or imli chutney or green chutney as per the choice.


Note:- Keep remember to fry kachori on low flame for good texture & taste.


Double Layered Cake


Cake is a menu which is everyone like to have anytime. Here I am presenting double layer cake which is made by only wheat flour . So, let's start the recipe. 

Ingredients:-


Wheat flour - 2 full cup
Fine sugar - 11/2 cup + 1 tsp (for sprinkling on top)
Salt - 1/2 tsp
Chocolate powder - 1/2 cup
Coffee - 11/2 tsp
Backing Soda - 1/2 tsp
Vinegar - 2 tsp
Vanilla essence - 2 tsp
Oil - 1 cup
Milk - 2 cup
Tutti Frutti - 1/2 cup

Procedure:-

  • Preheat the microwave on 180°c. 
  • Meanwhile Take wheat flour in a big bowl.
  • Add dry ingredients such as sugar, salt, coffee.
  • Mix it very well by whisk. 
  • Now divide this mixture in two equal parts in two different bowls.
  • Now take first part.
  • In this part, add whole 1/2  cup chocolate powder & 1/4 tsp baking soda.
  • Mix it again by whisk.
  • Make a hole in the center of this mixture.
  • Add 1 cup milk, 1/2 cup oil, 1 tsp vanilla essence, 1 tsp vinegar & 1/4 cup tutti frutti.
  • Mix it all very well till 2-3 mins.
  • Make slightly liquid better.
  • After completion of preheating process, take a cake teen.
  • Place a aluminium foil on bottom of teen.
  • Add first part into it & keep it in microwave for 3 mins.
  • Now take second part.
  • Make a hole in the center of this mixture.
  • Add remaining 1 cup milk, 1/2 cup oil, 1 tsp vanilla essence, 1 tsp vinegar, 1/4 tsp backing soda & 1/4 cup tutti frutti.
  • Mix it also very well.
  • After 3 mins , take out the cake teen from the microwave & check it's top looking baked or not.
  • If yes, then put second part of better on it.
  • Now again keep it in microwave for 5 mins.
  • After 5 mins , check by knife/tooth pic that better is sticking on it or not.
  • If not sticking it means cake is ready but it is sticking then let it bake for 2 mins more.
  • Now check it again that is done or not.
  • Once it is completely baked, take out the cake from microwave & let it cool.
  • Now take it out in a plate & sprinkle some sugar on top of it for decorating.
  • Finally cake is done.  

Note 1:- You can take all purpose flour(maida) instead of wheat flour or can take 1/2-1/2 portion of both of these flour.

Note 2:- You can use normal oven/cooker/idli maker if you don't have microwave. Only the time may differ if you use other then microwave.
