Khakhra


Khakhra / flat bread is a thin crispy cracker which is very popular in Gujrati cusine. It is very easy to make. The good thing is that it is very healthier option for breakfast & snacks. Various types of khakhra are available. Here I am sharing recipe of methi khakhra. So let's start to make it with the easy steps...

Ingredients---

Wheat flour - 1 cup
Gram Flour - 2 tsp
Dry Fenugreek Leaves - 11/2 tsp
Salt - as per taste
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Cumin seeds - 1/2 tsp
Carom seeds - 1/4 tsp
Oil - 1/4 cup (for kneading & greasing)
milk -  for kneading

Steps:-

• Take wheat flour in a bowl.
• Add gram flour, dry fenugreek leaves, salt , red chilli powder, turmeric powder, cumin seeds, carom seeds.
• Mix it well.
• Now add oil & mix it again.
• Now knead the dough with milk. Make a semi stiff dough.
• Grease it with oil & keep aside for 15-20 mins.
• Now knead it once again & divide the dough into equal size ball.
• Now roll out each ball into very thin roti / chapatti.
• Meanwhile heat a thick tawa .
• Now put chapatti on tawa.
• Roast from both the sides on low flame by pressing with cloth or spatula until it becomes like a papad.
• Once all khakhras are done  , keep aside for cooling.
• Khakhra is ready now. Enjoy it with tea or pickle or with chutney.
• You can store it in a air tight container for 10-15 days.

Note 1:- You can use water also for kneading the dough.

Note 2:- You can add green chili paste also in place  of red chilli powder.

Note 3:- You can apply oil/ ghee on both the sides for roasting.


Shahi Tukda


"Shahi Tukda" or "Shahi Tukra" or "Double Ka Mitha" is a very famous Hyderabadi dessert. Although it is a traditional Hyderabadi dish but it is well known not only in India even outside India people also like this delicious bread pudding.So Here I am sharing the recipe of this yummy sweet dish...



For Rabdi---

Ingredients:-

Milk - 1 ltr (full cream milk)
Sugar - 1/3 cup 
Cardamom Powder - 1/2 tsp
Saffron threads - 8 to 10

Procedure:-

• Firstly heat the full cream milk in a non stick or heavy bottom pan.
• Continuously stir it ( by that milk will not stick on bottom of pan) & get it boil on medium flame.
• Once the creamy layer started to form, collect the cream on the sides of the pan.
• Now again get the milk to boil.
• Meanwhile in a bowl , take some boiled milk & put saffron threads in it. Mix it very well & then add it into boiling milk. Same time add cardamom powder also.
•Now mix it in a well manner & let it boil.
•Once it is boiled , again collect the cream on sides. Repeat this process until milk reduces to one third.
•Now add sugar & stir it continuously.
• Now get the milk again to boil for 8-10 mins.
• Scrape off the collected cream from the edges.
• Now Rabdi is done. Turn off the gas & take out the Rabdi in a bowl.
• Keep it aside for cooling.


For Syrup---

Ingredients:-

Sugar - 1 cup
Water -1 cup
Cardamom Powder - 1/2 tsp

Procedure:-

• Take sugar in a pan & keep the pan on low flame.
• Now add water in it & stir properly.
• Let the sugar dissolve completely.
•Now add cardamom powder & stir again( It is optional because cardamom powder already added in Rabdi).
•Now cook it until one string consistency. It takes 7-8 mins.
•Syrup is done now , keep it aside for cooling.

For Serving---

Ingredients:-

Bread - 6 slices
Clarified Butter or ghee - for frying
Tutti-frutti - 1/2 cup

Procedure:-

• Cut the Bread slices in a triangular shape.
• Deep fry it in  hot ghee until it turns goldan brown.
• Take it out on kitchen paper to soak excess ghee.
•Now dip it in the sugar syrup.
• Now take some rabdi in a plate , arrange all the bread slices on it. Again add remaining rabdi on slices.
• Now garnish with the colourful tutti-frutti.
•Finally the delicious shahi tukda is ready.
•Serve it & enjoy it with the family.

Note 1:- U can normally roast the bread ,if you don't want to fry.
Note 2:- U can use dry fruits also for garnishing.
