Kachori is a very famous Indian dish. This mouth watering menu never require any introduction. There are various form of kachori available like moong dal kachori / aaloo kachori / mutter kachori / pyaj kachori/ mini kachori etc. Here I am share the recipe of moong dal kachori...
Ingredients:-
For Dough---
All Purpose Flour - 2 cup
Wheat Flour - 1/2 cup
Gram Flour - 1/2 cup
Salt - as needed
Oil - 1/2 cup
For Stuffing---
Moong Daal (Yellow) - 1 cup
Gram Flour - 2 tsp
Oil - 3 tsp
Mustard Seeds - 1/4 tsp
Cumin Seeds - 1/2 tsp
Fennel Seeds - 11/2 tsp
Asofetida (hing) - as per taste
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 3/4 tsp
Cumin Powder - 1/2 tsp ( optional )
Salt - as per taste
Dry Mango Powder - 1 tsp
Procedure:-
For Dough ---
• Take a large bowl.
• Take all the flours like all purpose flour, wheat flour & gram flour in it.
• Add salt & mix all the ingredients.
• Make a hole in the center of this mixture & add oil in it.
• Now mix it again very well.
• Now add some water & start to knead the dough. Make a smooth & soft dough.
• Grease the dough with oil & cover it.
• Now keep it aside for 20 mins.
For Stuffing---
• Firstly, in a bowl soak moong dal for 2-3 hours.
• Drain off the water & then transfer it to the blender jar.
• Now blend it & make a course paste.
• Now in a pan, heat oil.
• Now add mustard seeds , cumin seeds, hing & fennel seeds.
• Saute untill the spices turn aromatic.
• Further add turmeric powder, coriander powder, red chilli powder, cumin powder, dry mango powder & salt.
• Saute again for 1-2 mins on low flame.
•Now add gram flour & roast it untill turns aromatic.
• Now add coursely ground moong dal.
• Mix it well & cook until the moong dal is well combined.
• Now stuffing is ready. Keep it aside to cool completely.
Dough & stuffing both are ready , so let's start the procedure for "KACHORI"...
•Take oil in a pan for frying & let it hot.
•Once oil gets hot , keep the flame low.
•Meanwhile take the dough & knead it once again just to make it smooth.
• Pinch a small sized dough & tuck well.
• Grease with oil & roll it gently.
• Place a small ball sized prepared moong dal stuffing.
• Start to pleat & seal tightly.
•Pinch off the excess dough & then again roll it gently. Make sure the thickness should be uniform.
• Drop it in the oil & leave until the kachori start to float by itself.
• Carefully flip over & fry the other side.
• Fry until the kachori turns golden brown & crispy.
• Now drain off the kachori on kitchen paper to remove excess oil.
• Finally the delicious kachori is ready.
•Serve it with tomato sauce or imli chutney or green chutney as per the choice.
Note:- Keep remember to fry kachori on low flame for good texture & taste.
