Green Chutney


Green coriander chutney means one chutney and many uses. Yes, it is the item which you make one time but can use multiple times. Actually, this chutney is a nice accompaniment with different different menus like sandwiches, patties, pakodes, dhokla & various chat dishes etc.

In fact you can combine it with any snacks option which will definitely give a good taste. So , let's start.....

Ingredients:-


  • Green Chilies - 3-4
  • Coriander Leaves - 4 cups
  • Salt - as per test
  • Cumin Seeds - 1 tsp
  • Coconut - 2 tsp of grated dry coconut (optional)
  • Sugar - 1 tsp or as per taste
  • water - 1/2 cup for grinding

Procedure:-


  • Wash the coriander leaves & put it into grinder jar.
  • Add remaining ingredients such as green chillies, salt, cumin seeds, grated coconut & sugar.
  • With some water, grind all the ingredients & make a smooth chutney.
  • Serve it with your delicious snacks like sandwiches, patties, bhel puri, ragda patties, sev puri, samosa, kachori etc.
  • You can store it in a covered container in the refrigerator. The chutney stays well for 8-10 days.

Moonglet Sandwich



There are lots of varieties available in sandwiches. Here I have added one more in it i.e. Moonglet Sandwich. You all are already had moonglet (which is nothing but a moong daal chila) & also had bread, but separately. I combined both & make a new sandwich option. Believe me it is really a lighter, healthier & delicious breakfast menu. So, here is the recipe...


Ingredients :-


For Moonglet---

  • Moong Daal (Green Split Lentil) - 1 cup
  • Ginger -1 inch
  • Green Chili - 1 or 2
  • Coriander Leaves - 1/2 cup 
  • Cumin Seeds - 1/2 tsp
  • Carom Seeds - 1/2 tsp 
  • Salt - As per taste
  • Red Chili Powder - 1/2 tsp 
  • Turmeric Powder - 1/2 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1/2 tsp (Optional)
  • Water - As per need
  • Oil - 1/2 cup for cooking
For Sandwich---
  • Bread - 2 slices (for each moonglet)
  • Butter - plain/ salted / garlic
  • Green Chutney
  • Tomato Sauce

Procedure :- 

  • Wash the moong daal & soak it overnight or at least for 2 hours.
  • Drain excess water & take out the daal in grinder jar.
  • Add ginger, green chili & coriander leaves in the jar. You can add water if necessary for grinding.
  • Now make a fine paste.
  • Take out this batter in a bowl, add cumin seeds, carom seeds, salt, red chili powder, turmeric powder, coriander powder, cumin powder & some water.
  • Mix it all very well by spoon or whisk.
  • Meanwhile put the nonstick pan  on gas & let it hot.
  • Once pan get hot then put some batter on the pan & spread evenly in a circular shape.
  • Now put 1-2 tsp oil over it.
  • Now let it cook on medium flame until it's lower side turns the golden brown.
  • Once one side is cooked then flip it & let cook the other side.
  • Once both side are done , take it out in a plate.
  • Now your moonglet is ready.

Now it's time to club the Moonglet with bread. So let's start...
  • Roast the bread with butter on both side.
Note :- You can use white bread /brown bread as per your choice. But I suggest to use brown bread because it is more healthier than white bread.
  • Take 2 slices of roasted bread. Now spread green chutney on one slice & tomato sauce on another slice.
Note :- You can use different chutneys or sauces like mint chutney/ garlic chutney/ chili sauce etc. as per your choice.
  • Now fold the moonglet in a square shape & keep it over green chutney slice.
  • Now keep tomato sauce slice on the moonglet. 

In this manner, Moonglet Sandwich is ready. Cut it in a triangular or square shaped pieces & serve it with mayonnaise/ tamarind chutney/ tomato ketchup & enjoy the delicious and healthy breakfast with tea.
   


Tamarind Chutney or Imli Chutney







Tamarind Chutney or Imli Chutney is a very delicious sweet & sour sauce which is made up by tamarind , jaggery/sugar & different spices. You can make it very easily & can store it in refrigerator for more than a month. The good thing is that you make it once & can use with multiple Indian food items like Dahi vada, Samosa,Kachori, Sev Puri & also with different chat items. So let's begin to make it...   



Ingredients---

  • Tamarind - 1 Cup 
  • Jaggery 1 Cup (Take broken pieces) 
  • Water - as per need
  • Red Chili Powder - 1 tsp
  • Cumin Powder 1 tsp
  • Salt - as per test


Method---


  • Soak tamarind for at least 1 hour in normal water or 15-20 mins in hot water. 
  • Mash it using hand & then strain it through strainer or clean cotton cloth.
  • Discard tamarind pulp & keep the tamarind water.
  • Add this tamarind water into a pan.
  • Add jaggery ,salt,red chili powder,cumin powder & water(if needed).
  • Cook it on medium flame for at least 15-20 mins.
  • Keep stirring at regular interval.
  • Remove the pan from heat and let it cool properly.
  • Transfer it in a clean glass jar and store in refrigerator so that you can use it for long time. 
  • Use it as & when required.

Dahi Vada Recipe





                                   
 Dahi Vada is a very famous Indian snacks. It is lightweight, delicious & very easy cooking snacks option.You can make it on any festival, any party or anytime. It is loved by people of all age groups. So let's start to make it...

For Vada---

Ingredients:-

  • Urad Daal/ Moong Daal
  • Ginger
  • Salt
  • Black Pepper
  • Oil
Procedure--- 

Take 1 cup Urad Daal ,wash & soak it overnight or for at least 4-5 hrs. After soaking, drain it & put  it into the mixer jar. Add 1 small size ginger & then make a  fine paste. Put this paste in a bowl & add salt (as per taste) and 1/3 tsp black pepper powder. Now mix all of these by your hand or spoon or whisk for 3-4 mins . Now your batter is ready , Meanwhile put Pan on Gas, add sufficient oil in it & let it hot. 
                
Now take some water & make your all four fingers wet then take some batter on it then give it proper shape & then add it into the oil. If you do it with wet fingers , batter will not stick on it & you can easily put vada into oil.
               
According to size of pan, add 4-6 vada in pan then fry it on medium flame until it's color turns golden brown. Make all the vadas with the same manner.
            
Now take some water in a bowl then add all vada into it until it completely wet. It takes around 5-7 mins. Now remove excess water from all vadas one by one then put it into a plate.
               
You can make 20 vadas(approx) with this much batter.

Note:- You can add some water for making fine paste when you grind the daal but remember you have to make thick paste ,so add water accordingly.

For Dahi---

Ingredients:-
  • Curd
  • Sugar
  • Salt
  • Water
Procedure:-

Take 500 gms curd in a bowl then add some sugar , salt &  water. now mix it well then keep it in refrigerator until you serve it.

For Serving---

Take a small bowl then put 1-2 vada in it then add dahi on vada then put tamarind chutney  on it then sprinkle some red chili powder, cumin powder & salt(optional). Now delicious Dahi Vada is ready.
